Ingredients for making Picanha in the oven with coarse salt:
1 kilogram of rump steak (whole piece)
1 kilogram of coarse salt
4 egg whites
½ cup of wheat flour (70 grams)
4 sprigs of rosemary or thyme
How to make Picanha in the oven with coarse salt:
To make this oven-roasted steak with rock salt you'll need a whole piece of sirloin steak, weighing about 1 kilogram. Don't slice the steak or cut the fat off, it's necessary to make the meat juicy.
Tip: If you are using frozen sirloin steak, allow it to thaw completely before preparing the recipe.
Preheat the oven to 200ºC. In a bowl place the egg whites (without beating), the coarse salt and the wheat flour. Place some of this mixture on a baking sheet, place the rosemary or thyme sprigs on top and arrange the steak with the fat facing up on this "path".
Completely cover the steak with the remaining coarse salt mixture, pressing with your hands to adhere well. Bake at 200ºC for 45 minutes for grilled steak or 30-35 minutes for rare steak. When serving, break the layer of salt, remove it and slice the steak.
Tip: You don't need to cover the steak with aluminum foil when roasting.
